San Roque cuisine is much influenced by the different cultures that through centuries inhabited this region, Tartessos, Phoenicians, Cartagineans, Romans and Arabs.

The ancient town of Carteia on the San Roque coast, was occupied by all those civilizations.

The commercial mind of its inhabitants and the interchange with other cultures, have made the "sanroqueñan" cuisine a mixed of the most varied dishes based mainly on fishermen and sailor's ways of cooking.

The Greeks sailor brought its fish stews, with a very particular care for the taste of fish; the Arab tradition added the savoury aromatic plants, spices and dry fruits.

A very special mention have to be made to the "raya en amarillo" (ray in yellow sauce); vermicelli with clams, and the dish you can't miss: the "potaje de sepia con garbanzos", typical stew of cuttlefish with cheak peas.

Come and taste our rices at the fishermen style, delicious; ask for the fried seaweeds (ortigas),and the "Jureles and Gallineta soups."
